Mario’s culinary journey is rooted in heritage, shaped by experience, and guided by purpose. A first-generation American born to Cuban and Italian parents, Mario grew up immersed in two rich culinary traditions—learning the beauty of simplicity from his Italian mother and the soul of island flavor from his Cuban father. Food became his first language of expression.

After graduating from the Culinary Institute of America, Mario sharpened his skills in kitchens and concept development, co-founding Colada Shop in 2016—a vibrant Cuban café bringing food, coffee, and culture to Washington, D.C. In 2019, he helped launch the food program for Serenata and Zumo in La Cosecha, a dual-concept project that pushed boundaries in Latin American mixology and cuisine.

In search of new horizons and deeper roots, Mario relocated to Mérida, Mexico, where he co-founded Casa Magu, a boutique hospitality concept, with his partner and fashion designer Rene Silva. Together, they’ve created an intentional space that celebrates culture, design, and belonging.

Today, Mario’s passions lie in hospitality consulting, giving back to the queer community, and helping shape an inclusive, vibrant creative scene in his new home. His work is driven by a commitment to authenticity, cultural celebration, and creating meaningful experiences through food and place.
